So it’s the dead of winter in Wisconsin. And what is there to do? NOTHING. I mean, that’s not entirely true…..but since going anywhere involves endless bundling and inevitably freezing off your fingers and toes, we pretty much choose to just stay home. A lot. And since we find ourselves looking for ways to be entertained….at home….we end up relying on our favorite TV shows. A lot! And I kind of love it.
For the girls, it’s either Full House or Fuller House….which is sort of amazing considering the fact that I grew up on Full House. And for Jorden and me? Well, we have a few. Top Chef, Blue Bloods, Chicago Fire, This is Us, and….The Bachelor! Yep, that’s right. Jorden actually loves The Bachelor just as much as I do. Which means we pretty much have a show for every night of the week! Wahoo!
Now, just in case you’re questioning how fun it can be to just watch TV every night….let me explain. We don’t just watch TV. We eat, too! At least once a week, Jorden and I wait until after the kids are in bed and then we get takeout. Sometimes it’s on Mondays, in an attempt to make Monday more tolerable. Sometimes it’s on Thursdays, while we watch Top Chef. And sometimes it’s a random day in the middle…just because. Because we live in Wisconsin, and it’s the dead of winter, and we need something to look forward to!

Of course, up to this point we’ve had football. At least on weekends. And you better believe we’ve looked forward to sitting down on a Sunday afternoon and watching the Packer game. But now….the Packers’ season is over and we have just one game left before we’ll have to find another way to spend our weekends! Oy! So I’m thinking we need to have one last hurrah.
A Super Bowl extravaganza! With this Southwest Buffalo Chicken Dip, of course. In the warmth and comfort of our own living room. I’m not even sure if we’ll invite other people or if we’ll just do what our family does best: enjoy one of our favorite TV shows. With food! Ha!
But seriously. Let’s talk about the food. Are you buffalo chicken fans? We are…in a major way. In fact, we’ve picked up wings during at least a few football games this season. But for the Super Bowl? I’m taking it to the next level with this Southwest Buffalo Chicken Dip.
It combines the classic buffalo chicken flavors with southwest flavors of black beans, corn, tomatoes, and southwest seasoning. The end result is gooey, cheesy, creamy, spicy, and pretty much amazing. And since Pick ‘n Save has everything you need to make it, including my favorite Simple Truth chicken breast, black beans, and corn…all that stands between you and this Southwest Buffalo Chicken Dip is a 10 minute stop. Of course, if you’re anything like us, that’s not all you’ll need to pick up. But it’s definitely a good start!

Southwest Buffalo Chicken Dip recipe
Southwest Buffalo Chicken Dip
This Southwest Buffalo Chicken Dip puts a southwest spin on a party favorite! It’s gooey, cheesy, and loaded with delicious flavor….perfect for game day!
- 2 c. Simple Truth chicken breast (cooked and chopped)
- 8 oz. cream cheese (softened)
- 1 1/2 c. shredded cheddar cheese (divided)
- 1/2 c. crumbled blue cheese
- 1/2 c. Simple Truth corn (drained)
- 1/2 c. Simple Truth black beans (drained & rinsed)
- 1/2 c. diced tomatoes
- 1/2 c. ranch dressing
- 1/2 c. hot sauce
- 2 Tbsp. southwest seasoning
- Topping: 2 green onions (sliced)
- Combine all ingredients in a large mixing bowl. **Reserve 1/2 c. shredded cheddar cheese**
- Mix well; spread into a 1 1/2 qt. baking dish and sprinkle with reserved cheese.
- Bake at 350 degrees for 25-30 minutes.
- Top with sliced green onions.
