There are very few vegetables my family DOESN’T love roasted, but if I had to pick an all time favorite, it would be broccoli. They’ll devour an entire pan of it in one sitting… and literally still be asking for more.

Made with just 4 simple ingredients – plus salt & pepper – it’s super easy to make and packs a TON of delicious flavor. But my favorite thing about it just might be the crispy panko bread crumbs, which take it to an entirely new level.

🥦 Ingredients

For this recipe, I would recommend buying either broccoli crowns or packaged broccoli florets. Frozen broccoli will work in a pinch, but I would definitely opt for fresh if you can.

• 6 c. broccoli florets
• 1 Tbsp. olive oil
• 2 Tbsp. grated parmesan cheese
• 2 Tbsp. panko bread crumbs
• 1/2 tsp. salt
• fresh pepper, to taste

📋 Instructions

The most important part of prepping this recipe is to make sure the broccoli is fully coated with the oil, cheese, and bread crumb mixture. Take the few extra minutes to mix the ingredients all together in a bowl before transferring them to a baking sheet. You’ll be glad you did!

1. Preheat oven to 400° F.
2. Combine all ingredients in a large mixing bowl.
3. Toss until broccoli is thoroughly coated.
4. Spread out onto a large rimmed baking sheet.
5. Bake at 400° for 15 minutes.

🥓 Recipe variations

My family loves this recipe “as is”… but you might enjoy trying one or more of these variations!

• Add 6 oz. chopped bacon to the mixture. The bacon will cook along with the broccoli.
• Substitute cauliflower for half of the broccoli.
• Add 2 cloves minced garlic or 1/2 tsp. garlic powder.
• Add 1/2 tsp. red pepper flakes for a spicy kick.
• Add 2 Tbsp. dry ranch dressing mix to the mixture before roasting.
• Sprinkle with fresh shaved Parmesan cheese before serving.
• Squeeze fresh lemon juice over broccoli before serving.
