So. Today is my birthday! Yay! And, as you might imagine, one of the biggest questions every year on my birthday is, “What will I eat today?” I know I’m not the only one….right?
There’s just something about food that was made for celebrating. I celebrated with good friends and delicious food over the weekend, we’re going out to eat as a family tonight, I have dinner plans with another good friend tomorrow, and Jorden and I have reservations at one of our favorite restaurants Saturday night. Yes, I am eating my way through my birthday, thankyouverymuch. (Is there any other way to do it??)
So naturally, when I woke up this morning, I was already thinking about breakfast. What does one make themselves for breakfast on their birthday? I have to admit – donuts crossed my mind – but at the end of the day, I’m an eggs for breakfast kind of gal. Of course, plain old scrambled eggs on your birthday doesn’t quite cut it. But you know what does cut it? Jalapeño Bacon Avocado Toast!
My love for avocado toast is nothing new….I LOVE avocados, and there’s something about eating them right on top of bread that feels almost too good to be true. But I quickly discovered that the best way to make avocado toast even better is to add EGGS! And recently? I’ve swapped out whole eggs for Phil’s Fresh Egg Whites.
I love Phil’s Fresh Egg Whites, not only because they’re convenient and so easy to use, but because the only ingredient in them is Cage-Free Egg Whites. And with 12 grams of protein in one half cup, there really is no better way to start your day. Unless, of course, you combine them with avocado toast and jazz them up with all the fixings of JALAPENO POPPERS!!!
Who would’ve thought….jalapeno bacon avocado toast for breakfast….but you know what? It works! Think about it: cream cheese + avocado + egg whites + bacon + jalapeños = the BEST breakfast ever!!! Fitting for a birthday, but easy enough for any day. And delicious enough for every day! And best of all, it totally works for lunch or dinner, too. So…happy birthday to me! Jalapeno Bacon Avocado Toast
Jalapeño Bacon Avocado Toast combines two classics in one delicious dish that’s perfect for breakfast, lunch, or an anytime snack!
- 4 slices crusty Italian bread
- 2 Tbsp. cream cheese
- 1 avocado (mashed)
- 1/4 tsp. kosher salt
- 1/2 c. Phil's Fresh Egg Whites
- 1 fresh jalapeño (thinly sliced (seeds removed for less heat))
- 1-2 pieces bacon (cooked and crumbled)
- 1 Tbsp. panko bread crumbs
- Toast bread in oven or toaster.
- Spread each bread slice with 1/2 Tbsp. cream cheese.
- Combine mashed avocado and kosher salt; divide evenly among bread slices.
- In a small skillet, scramble egg whites and spoon evenly over avocado.
- Top with jalapeño slices, crumbled bacon, and bread crumbs.
- Season with salt & pepper as desired.

I love this product and I love this recipe. I have a garden filled with peppers that need to be picked before the first frost. I think this is the perfect way to enjoy them.

Maybe it did (off-panel) happen, but I subscribe to the theory of h;68s2ow, don’t tell’* and in this case they didn’t even tell us. It simply requires too much suspension of disbelief to think that this would occur.
