If you’ve ever been to a Mexican restaurant, chances are you’ve seen Huevos Rancheros on the menu. But have you ever wondered what it actually is? Well… now you know!
Huevos Rancheros translates to “ranch eggs” which makes sense when you know the history behind the dish. Egg dishes like this were served in Mexico at “almuezo,” a second breakfast that was served to ranch hands and farm workers after their early-morning chores. Today it’s a popular dish that can be eaten any time of day!
I’m a huge sucker for a delicious egg breakfast, and I recently had the opportunity to learn more about where our eggs come from. I participated in a virtual event sponsored by the United Soybean Board and Best Food Facts. It was all about sustainable egg farming and the various practices farmers engage in to ensure sustainability in our egg supply.
We learned from a panel of experts all about what sustainability looks like when it comes to egg farming, the pros & cons of different types of cages, and additional practices that help make egg farming more sustainable.

🍅 Ingredients
The basic ingredients for Huevos Rancheros are tortillas, cooked salsa, and eggs. I decided to add a base of refried beans and a bunch of fun toppings to jazz things up. For the beans, I used homemade Refried Black Beans, but you can use store bought if you’d like. Here’s everything I used:
- 4 corn tortillas
- 1 cup refried beans
- 4 large eggs
- 1 1/2 cups salsa
- 1/2 cup pico de gallo
- 1 avocado, thinly sliced
- 1/4 cup queso fresco, crumbled
- fresh cilantro, minced
📋 Instructions
There are just a few steps to this recipe, and once they’re completed, your dish is ready to assemble:
Reduce the salsa – Heat 1 Tbsp. oil in a skillet over medium heat. Add salsa and cook to reduce, stirring regularly, about 5-7 minutes. Remove from heat.
Heat the beans – Heat refried beans until warm, stirring regularly.
Warm the tortillas – In a separate skillet, warm tortillas over medium heat 1 minutes on each side or until edges begin to char. Remove from heat and set aside.
Fry the eggs – In the same skillet, add a small amount of butter and fry the eggs one at a time.
Assemble the huevos rancheros – Spread beans evenly on top of tortillas. Add one egg to each, then add warm salsa and pico de gallo. Garnish with avocados, queso fresco, and cilantro.
🌶 Recipe variations
As always, there are endless variations to this recipe. You can feel free to switch things up according to your tastes! Here are a few easy, delicious ideas:
- Substitute flour tortillas for corn
- Add two eggs instead of one
- Scramble the eggs instead of frying them
- Add cooked bell peppers
- Add fresh sliced jalapeños as a garnish
- Substitute whole black beans for refried beans
- Use any of your favorite cheeses in place of queso fresco
- Top with hot sauce
♨️ Storing & reheating
The best way to store Huevos Rancheros is to store the individual components separately, then reheat and assemble the dish when you’re ready to eat it. If you have pre-assembled tortillas, you can reheat them in a skillet over medium heat or in the oven at 350° until heated through.
