This Fresh Strawberry Bread is the perfect way to make use of fresh summer strawberries! It comes together quickly and is packed with delicious strawberry flavor. Sure to become a family favorite!
I don’t know about you, but there’s something about a delicious quick bread that always hits the spot. And as much as I love banana (who doesn’t, right?) I also really love mixing it up with whatever fruits are in season. Because if there’s one thing that’s true about quick bread, it’s that anything goes!
This Fresh Strawberry Bread is one of our all time favorites… made with fresh summer strawberries and a hint of vanilla. It’s perfectly sweet and delicious, and honestly never lasts long! (Pro tip: make a double batch!)
Best of all, it couldn’t be easier to make. Just mix the ingredients together, pop it in the oven, and bake it for an hour. And then… say hello to your new favorite breakfast treat!
🍓 Ingredients
- 2 1/2 c. all purpose flour
- 1 c. sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 3 Tbsp. vegetable oil
- 1 c. milk
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. fresh sliced strawberries
📋 Instructions
- Preheat oven to 350° F.
- Combine all ingredients in a large mixing bowl; fold in fresh strawberries.
- Pour into greased bread pan.
- Bake at 350° for 55-65 minutes or until top is golden brown and toothpick inserted in center comes out clean.
- Cool slightly, then remove from pan and transfer to a wire rack to cool completely.

I bought some strawberries from my local farmers market and was looking for a good recipe. I ran across this and thought I would try it. It was absolutely amazing, couldn’t stop eating it. I did change out the 3 tbsp. of oil for some homemade sugar-free apple sauce, I had canned. Moist and delicious will make it again and again.

I have this in the oven now. It smells so good, but I think my loaf pan must be larger than yours because my bread is well above the top of the pan. It wasn’t quite finished at 55 minutes. I can’t wait to try it!

Mine turned out horrible! It was dry and it went into the garbage. There wasn’t enough liquid for the amount of dry ingredients. 🙁

I made this for Christmas morning as directed, although I sprinkled a little extra sugar on the strawberries and let them sit about 10 min before folding them in. Well, 10 Lords-a-Leapin’ this was a Christmas Miracle. Incredibly moist, tender, perfectly (but not overly) sweet, and beautiful to look at sliced on the plate. Paired with a hot cup of coffee as we sat opening presents was simply heaven. We have a new Christmas morning tradition! Thank you for this perfect recipe!
