Not gonna lie. I ate it straight from the bowl, but it would also be delicious in a sandwich, a lettuce wrap, on top of a salad, or with crackers. Basically any way you eat this Curry Dijon Chicken Salad, you’re going to love it.
WHAT INGREDIENTS ARE IN THIS RECIPE?
- Mayo
- Plain yogurt
- Pineapple juice
- Dijon mustard
- Curry powder
- Chopped cooked chicken
- Grapes
- Pineapple
- Celery
- Golden raisins

HOW DO YOU MAKE CURRY DIJON CHICKEN SALAD?
- In a small bowl, combine mayo, plain yogurt, pineapple juice, dijon mustard, and curry powder. Mix well.
- In a separate large bowl, combine chicken, grapes, pineapple, celery, golden raisins, and toasted almonds.
- Season lightly with salt and pepper.
- Add sauce and mix until combined.

WHAT KIND OF CHICKEN DO YOU USE?
I love using rotisserie chicken for the flavor, moistness, and simplicity. However, you can feel free to use any type of chopped, cooked chicken. I tend to prefer white meat to dark meat in chicken salad, but you can also use a combo of the two depending on your preferences.
WHERE DO YOU FIND GOLDEN RAISINS?
Golden raisins can be found at most grocery stores alongside the regular raisins. You can feel free to substitute regular raisins or even craisins in this recipe if you prefer.
CAN YOU MAKE THE SAUCE WITHOUT MAYO?
Yes. If you prefer a mayo-less sauce, you can feel free to substitute plain yogurt for the mayo. Personally, I love the creaminess and flavor the mayo offers, so I would recommend a blend of the two.
CAN YOU SUBSTITUTE A DIFFERENT KIND OF NUTS?
Absolutely. Chopped pecans, pine nuts, or even walnuts would all be delicious in this recipe. They are primarily adding a crunch factor, so as long as you have that, it should work just fine.
I know, I know….curry can be scary. But I PROMISE. The flavor in this Curry Dijon Chicken Salad is mild, and it’s balanced out by the dijon mustard, the mayo, and the Greek yogurt. Ingredients
- 3 c. chopped, cooked chicken
- 3/4 c. red grapes, halved
- 2/3 c. chopped, canned pineapple (reserve 1 Tbsp. juice)
- 1/3 c. sliced almonds, toasted
- 1/4 c. chopped celery
- 1/4 c. golden raisins
- 1/2 c. mayo
- 1/4 c. plain Greek yogurt
- 1 Tbsp. pineapple juice from can
- 2 tsp. dijon mustard
- 1 tsp. curry powder
Instructions
- In a small bowl, combine mayo, plain yogurt, pineapple juice, dijon mustard, and curry powder. Whisk well; set aside.
- In a separate large bowl, combine chicken, grapes, pineapple, celery, golden raisins, and toasted almonds.
- Season lightly with salt and pepper.
- Add sauce to chicken salad mixture and mix until combined.
- Serve with crackers, rolls, lettuce wraps, or as desired.
